A filling and healthy bowl of quinoa and black beans with lots of fresh veggies and a spicy lime dressing. Ideal for a quick and wholesome supper
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 can 15 oz black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions:
Rinse quinoa under cold water and cook it according to package instructions using 2 cups of water
In a large bowl, combine cooked quinoa, black beans, cherry tomatoes, avocado, red onion, and cilantro
In a small bowl, whisk together olive oil, lime juice, salt, and pepper
Pour the dressing over the quinoa mixture and toss gently to combine
Serve immediately or refrigerate for a refreshing cold bowl
