A delicious and creamy keto-friendly version of the classic mac and cheese, using cauliflower instead of pasta. Perfect as a side dish or a satisfying lunch option for the whole family.
Ingredients:
- 1 large head cauliflower, cut into florets
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons cream cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Chopped parsley for garnish optional
Instructions:
Preheat oven to 375F 190C
Steam cauliflower florets until tender, about 5-7 minutes
Drain well
In a saucepan, heat heavy cream over medium heat until simmering
Reduce heat to low, add cheddar cheese, Parmesan cheese, cream cheese, garlic powder, onion powder, salt, and pepper
Stir until cheeses are melted and sauce is smooth
Add steamed cauliflower to the saucepan and gently toss until cauliflower is evenly coated with cheese sauce
Transfer cauliflower mixture to a baking dish
Sprinkle with additional cheddar cheese if desired
Bake in the preheated oven for 15-20 minutes, or until bubbly and golden brown on top
Garnish with chopped parsley before serving, if desired
