Easy Tomato Gazpacho Soup

A cold soup for summer that tastes great with ripe tomatoes, cucumbers, and bell peppers. This simple gazpacho is a great way to cool off on hot days.

Ingredients:

  • 6 ripe tomatoes, diced
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups tomato juice
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Dice the tomatoes, cucumber, red bell pepper, red onion, and garlic and put them all in a blender

Blend until smooth, adding tomato juice little by little until you get the consistency you want

Add the red wine vinegar and olive oil and mix them in after moving the mixture to a large bowl

Add pepper and salt to taste

Put it in the fridge with the lid on for at least two hours to really chill it down

Add some fresh basil leaves to the top before serving

Enjoy the cool gazpacho while its still cold
