Vegan pancakes that are really tasty, topped with vanilla ice cream, warm mixed berries, and maple syrup.
Ingredients:
- 1 cup flour
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1 cup almond milk
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract
- 1 pint vegan vanilla ice cream
- 2 cups mixed berries strawberries, raspberries, blueberries
- 1/4 cup maple syrup
Instructions:
Put flour, sugar, and baking powder in a bowl and mix them together
Put almond milk, apple cider vinegar, and vanilla extract in a different bowl and mix them together
Pour the wet ingredients into the dry ones slowly and mix them together until the mixture is smooth
Put a nonstick pan on medium heat and lightly oil it
Put some batter on the pan with a ladle
Cook until bubbles appear on top
Then flip and cook until golden brown
Do it again with the rest of the batter
While the pancakes are cooking, put the berries in a saucepan and heat them over low heat until the juices come out
A scoop of vegan vanilla ice cream and hot berries should be put on top of the pancakes
Pour maple syrup over the top before serving
