Ingredients:
- 1 1/2 cups oat flour
- 1/2 cup almond flour
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup mashed ripe bananas
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 cup chopped strawberries
Instructions:
Setting the oven to 350F 175C and putting paper liners in a muffin tin
Add coconut sugar, baking powder, baking soda, salt, and oat flour to a large bowl
Use a whisk to mix the ingredients together
Put the applesauce, vanilla extract, and mashed bananas in a different bowl
Then, mix the two together
Stir the wet and dry ingredients together until they are just combined
Carefully fold in the chopped strawberries
Fill up each muffin liner about three quarters of the way to the top with batter
Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
