Cuban Girls in Albany

A classic green bean almondine recipe that adds a touch of elegance to your Thanksgiving spread. The crisp-tender green beans are complemented by the nutty flavor of almonds and garlic-infused olive oil.

Ingredients:

  • 1 lb green beans, trimmed
  • 2 tbsp olive oil
  • 1/3 cup sliced almonds
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions:

After blanching for two to three minutes in boiling water, put the green beans in an ice bath

Heat the olive oil in a skillet over medium heat

Toast the almond slices until they turn golden brown

Fry the minced garlic in the skillet for one to two minutes, or until it becomes fragrant

Toss the blanched green beans in the skillet with the almond and garlic mixture, making sure they are well coated

After adding salt and pepper to taste, cook the beans for a further two to three minutes, or until they are crisp-tender

If desired, top with additional sliced almonds and serve right away
