Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup dulce de leche
- For Caramel Sauce:
- 1/2 cup granulated sugar
- 2 tbsp water
- 1/4 cup heavy cream
- 1/4 cup unsalted butter
- Pinch of salt
- Additional dulce de leche for filling and drizzling
- Whipped cream and caramel drizzle for topping
Instructions:
Warm your oven up to 350 F 175C and put paper liners in a cupcake tin
Mix the flour, baking powder, baking soda, and salt in a bowl with a whisk
Put away
Mix the softened butter and sugar in a different bowl until the mixture is light and fluffy
One at a time, add the eggs and beat well after each one
Add the vanilla extract and mix well
Slowly add the dry ingredients mixture, mixing them with the buttermilk every other time
Start with the dry ingredients and end with the buttermilk
Dont mix any further than that
Use a spoon to mix in half a cup of dulce de leche
Fill each cupcake liner about two thirds of the way to the top with batter
Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean
Get the caramel sauce ready while the cupcakes are baking
Sugar and water should be mixed in a saucepan
Over medium-high heat, stir the pan every so often to make sure the sugar caramelizes evenly until it turns amber
Add the heavy cream and butter slowly while taking the pan off the heat
Stir until the mixture is smooth
To taste, add a pinch of salt
Take a break and let the caramel sauce cool down
After the cupcakes are done, let them cool for 5 minutes in the pan, then move them to a wire rack to cool completely
While the cupcakes are still cool, make a hole in the middle of each one with a small knife
Put a little dulce de leche in the hole
Pour the caramel sauce over the cupcakes
Top with whipped cream and a little more dulce de leche
