Paleo Chocolate Chip Blondies

Almond flour and coconut sugar are used to make these tasty gluten-free chocolate chip blondies. If youre on a grain-free or Paleo diet and want something sweet, these are the perfect treat.

Ingredients:

  • 2 cups almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free chocolate chips

Instructions:

Preheat the oven to 350F 175C

Grease an 8x8-inch baking dish with coconut oil or line it with parchment paper

In a large mixing bowl, combine almond flour, coconut sugar, melted coconut oil, eggs, vanilla extract, baking soda, and salt

Mix until well combined

Fold in the chocolate chips until evenly distributed throughout the batter

Pour the batter into the prepared baking dish and spread it out evenly

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean

Allow the blondies to cool completely in the baking dish before slicing into squares

Serve and enjoy
