Ingredients:
- 4 slices of bacon
- 1/2 cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsweetened almond milk
- 1 egg
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup sugar-free tomato sauce
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 2 large eggs
- Salt and pepper to taste
- Fresh basil leaves for garnish optional
Instructions:
Preheat your oven to 400F 200C
In a skillet, cook the bacon until its crispy
Remove the bacon, crumble it, and set it aside
Leave the bacon grease in the skillet
In a mixing bowl, combine almond flour, coconut flour, baking powder, salt, almond milk, and 1 egg
Mix until a dough forms
Press the dough onto a parchment paper-lined baking sheet, shaping it into a round pizza crust
Bake for 10-12 minutes or until it starts to turn golden
While the crust is baking, prepare the pizza sauce by mixing tomato sauce, garlic powder, dried oregano, and dried basil in a bowl
Set aside
Remove the crust from the oven and spread the pizza sauce evenly over it
Sprinkle the shredded mozzarella and grated Parmesan cheese on top of the sauce
Crack 2 large eggs onto the pizza, distributing them evenly
Sprinkle the crumbled bacon on top of the eggs, and season with salt and pepper to taste
Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese is melted, and the eggs are cooked to your liking
Garnish with fresh basil leaves if desired
Slice and serve your low carb bacon breakfast pizza hot
