Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup buttermilk
- 1/4 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar
- 1 tablespoon ground cinnamon
- Cream cheese glaze optional:
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
Instructions:
In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt
In another bowl, mix the buttermilk, milk, egg, melted butter, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; lumps are okay
In a separate small bowl, mix the brown sugar and ground cinnamon for the cinnamon swirl
Preheat a griddle or non-stick skillet over medium heat
Lightly grease with butter or cooking spray
Pour a ladleful of pancake batter onto the griddle to form a pancake
Immediately sprinkle a generous amount of the cinnamon swirl mixture onto the pancake
Once the edges of the pancake start to set and you see bubbles on the surface, flip the pancake and cook the other side until golden brown
Repeat with the remaining batter and cinnamon swirl mixture
For the cream cheese glaze optional: In a mixing bowl, beat the softened cream cheese until smooth
Add powdered sugar, milk, and vanilla extract
Mix until the glaze is creamy and well combined
Drizzle the cream cheese glaze over the cinnamon roll pancakes before serving
